Description

A quick, one-pot meal combining tender rice, mixed vegetables, and melted cheddar cheese. Perfect for busy days when you want a comforting, homemade dish with minimal cleanup.


Ingredients

  • 1 1/2 tablespoons vegetable oil or canola oil
  • 1/2 teaspoon fine sea salt
  • 1 cup extra-long grain white rice (15-minute rice)
  • 2 cups frozen mixed vegetables
  • 3 cups chicken stock
  • 1 1/2 cups shredded Cheddar cheese

Instructions

  1. Heat the oil in a medium saucepan over medium-high heat.
  2. Add the salt, rice, frozen mixed vegetables, and chicken stock to the pan.
  3. Bring to a boil and let boil for 1 minute.
  4. Reduce heat to low, cover, and simmer for about 10 minutes, or until the liquid is absorbed and the rice is tender.
  5. Remove from heat, add shredded Cheddar cheese, and stir until melted and evenly combined.
  6. Serve immediately while hot and creamy.

Notes

  • Use chicken stock for added flavor, but water can be substituted in a pinch.
  • To add protein, stir in cooked shredded chicken or beans.
