Ingredients

  • 2 cups all-purpose flour
  • 2 cups dark brown sugar, lightly packed
  • 1 teaspoon kosher salt
  • 3/4 teaspoon baking powder
  • 1 cup olive oil
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • Nonstick cooking spray, for the pan
  • 1 1/2 cups confectioners’ sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup cocoa powder
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • A pinch of kosher salt
  • Sprinkles, optional

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan with nonstick spray and line with parchment paper, leaving overhang.
  2. In a large bowl, whisk together flour, dark brown sugar, salt, and baking powder.
  3. In another bowl, whisk together olive oil, vanilla extract, and eggs until smooth.
  4. Add the wet ingredients to the dry ingredients and stir just until combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 35–40 minutes, until the center is set and a toothpick comes out with a few moist crumbs.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack and cool completely.
  8. To make the frosting, beat confectioners’ sugar, butter, cocoa powder, heavy cream, vanilla, and salt until smooth.
  9. Spread the frosting evenly over the cooled blondies. Add sprinkles if desired.
  10. Cut into squares and serve.
