Description
Soft, chewy oatmeal date bars naturally sweetened with Medjool dates and made without added sugar. These no-bake bars are gluten free, dairy free, vegan friendly, and perfect for healthy snacking or meal prep.
Ingredients
- 3/4 cup rolled oats (certified gluten free if needed)
- 1/3 cup super fine almond flour
- 1 1/2 cups pitted Medjool dates, tightly packed
- 3/4 cup natural almond butter
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 to 2 tablespoons coconut oil, melted and cooled
- 1/4 teaspoon salt
- 2 tablespoons dairy free chocolate chips, melted (optional)
- 2 tablespoons slivered almonds (optional)
- Pinch of flaky sea salt (optional)
Instructions
- Add pitted Medjool dates to a food processor and blend until a thick, sticky paste forms.
- Add rolled oats, almond flour, almond butter, vanilla extract, cinnamon, melted coconut oil, and salt.
- Pulse until a thick dough forms that sticks together when pressed.
- Line an 8 x 4 inch loaf pan with parchment paper.
- Press mixture firmly and evenly into the pan, compacting tightly.
- Refrigerate for at least 30 minutes to firm up.
- Optional: Drizzle melted dairy free chocolate and sprinkle almonds and flaky salt on top.
- Lift from pan and slice into 8 bars.
Notes
- If mixture is dry, add 1 tablespoon melted coconut oil.
- If mixture is too soft, add 1 to 2 tablespoons rolled oats.
- Use sunflower seed butter and oat flour for a nut-free version.
- Store refrigerated up to 5 days.
- Freeze individually wrapped bars up to 3 months.
