These No-Flour Cinnamon Apple Breakfast Muffins are soft, naturally sweetened, and made with hearty oats and fresh apples for a wholesome start to your day. Warm cinnamon and honey create a cozy flavor in every moist, tender bite.
Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 1/3 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/4 cup milk (dairy or unsweetened almond milk)
- 1 teaspoon pure vanilla extract
- 1 1/2 cups finely diced fresh apples (about 1 medium-large apple)
- 1/4 cup chopped walnuts or pecans (optional)
- 2 tablespoons raisins (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease lightly.
- For a smoother texture, blend rolled oats until they resemble coarse flour, or leave whole for more texture.
- In a large bowl, mix oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk eggs, honey or maple syrup, applesauce, milk, and vanilla extract until smooth.
- Combine wet and dry ingredients and stir until fully mixed. Fold in diced apples and optional add-ins.
- Divide batter evenly among muffin cups, filling each about three-quarters full.
- Bake for 18–22 minutes, until tops are set and a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Use certified gluten-free oats if needed.
- Do not overmix to prevent dense muffins.
- Store at room temperature for up to 2 days or refrigerate for up to 5 days.
- Freeze individually wrapped muffins for up to 3 months.
- For a loaf version, bake 35–45 minutes in a greased loaf pan.
