Description

Ingredients

  • For the peanut butter layer:
  • 1 cup natural peanut butter (unsweetened)
  • 1/2 cup almond flour
  • 1/3 cup powdered erythritol
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • For the chocolate topping:
  • 3/4 cup sugar-free dark chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. Line an 8×8-inch square pan with parchment paper, leaving overhang for easy removal.
  2. In a medium bowl, mix together peanut butter, almond flour, erythritol, melted butter, vanilla extract, and salt until smooth.
  3. Press the peanut butter mixture evenly into the pan and smooth the top.
  4. In a microwave-safe bowl, melt chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
  5. Pour melted chocolate over the peanut butter layer and spread evenly.
  6. Refrigerate for at least 1 hour or until firm.
  7. Lift the bars out using the parchment paper and cut into 12 squares.
