Description

No bake brownie bites are fudgy, soft, and decadently chocolatey treats made with just three simple ingredients. They require no baking, making them a quick and easy dessert option that is also vegan, gluten-free, and low-carb.

Ingredients

1 cup almond butter (smooth and drippy, no added sugar)

½ cup maple syrup (can substitute with honey or agave)

⅔ cup cocoa powder (unsweetened Dutch-processed)

Mini chocolate chips (optional, but recommended)

Instructions

  1. In a large mixing bowl, combine almond butter, maple syrup, and cocoa powder. Stir until smooth and well-combined.
  2. Using your hands, roll the mixture into small, bite-sized balls. Place the rolled bites on a plate lined with parchment paper.
  3. Refrigerate or freeze the brownie bites until firm, about 30 minutes to 1 hour depending on your desired consistency.

Notes

  • For a different flavor, swap the almond butter with peanut butter, sunflower seed butter, or tahini.
  • For extra indulgence, dip the brownie bites in melted chocolate and refrigerate until set.
  • For a salty-sweet twist, sprinkle coarse sea salt on top before chilling.
  • Add chopped pecans, walnuts, or other nuts for extra crunch.
  • Store in an airtight container in the fridge for up to 1 month or freeze for up to 6 months.
