Description

A juicy and flavorful mushroom Swiss burger topped with caramelized onions, sautéed mushrooms, and melted Swiss cheese, served on toasted brioche buns.


Ingredients

  • 1 ½ tablespoons unsalted butter, plus extra for toasting the buns
  • 2 large yellow onions, vertically sliced
  • 1 teaspoon salt, divided
  • 1 ½ pounds lean ground beef
  • 1 tablespoon olive oil
  • 8 ounces cremini mushrooms, sliced
  • 4 thick slices Swiss cheese
  • 4 brioche buns
  • Mayonnaise, to taste
  • Butter lettuce, as needed

Instructions

  1. Melt butter in a large skillet over medium-high heat. Add onions and cook for 8–10 minutes until softened.
  2. Reduce heat to medium, add ¼ teaspoon salt, and cook onions for 30–50 minutes until deeply golden and caramelized, stirring occasionally.
  3. While onions cook, divide ground beef into 4 patties. Slice mushrooms if needed.
  4. Transfer onions to a plate. In the same skillet, heat olive oil over medium. Add mushrooms and cook for about 10 minutes until browned. Season with ¼ teaspoon salt and pepper, then remove from pan.
  5. Increase heat to medium-high and cook burger patties, seasoning with remaining salt. Cook 3–4 minutes per side or until internal temp reaches 165°F. Add Swiss cheese during the last 2 minutes of cooking.
  6. Remove patties. Wipe skillet, butter buns, and toast cut-side down until golden.
  7. Assemble burgers: spread mayonnaise on buns, add lettuce, burger patty, caramelized onions, and mushrooms. Serve immediately.

  • Make caramelized onions in advance to save time.
  • Try garlic butter or aioli for extra flavor.
  • Use different mushrooms or cheeses to change the flavor profile.
  • Don’t press down on burgers while cooking to retain juiciness.
