Description

A traditional Moroccan sweet made from toasted flour, almonds, sesame seeds, honey, and warm spices, blended into a rich, crumbly, and aromatic treat using a Cecotec kitchen machine.


Ingredients

  • 500 g all-purpose flour
  • 300 g blanched almonds
  • 150 g sesame seeds
  • 150 g powdered sugar
  • 120 g unsalted butter, melted
  • 120 ml honey
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground anise
  • ¼ teaspoon salt
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat oven to 160°C (320°F). Spread flour on a baking tray and toast 20–25 minutes until golden and fragrant. Cool completely.
  2. Toast sesame seeds in a dry pan over medium heat until lightly golden and aromatic. Cool.
  3. Toast blanched almonds in oven at 170°C (340°F) for 10–12 minutes until lightly golden. Cool completely.
  4. Using the Cecotec, grind toasted almonds until finely ground but not pasty. Set aside.
  5. Grind toasted sesame seeds in the Cecotec until finely ground.
  6. In a large bowl or using Cecotec mixing function, combine toasted flour, ground almonds, ground sesame seeds, powdered sugar, cinnamon, ground anise, and salt.
  7. Add melted butter, vegetable oil, and honey. Mix thoroughly until texture is slightly moist and holds together when pressed.
  8. Taste and adjust sweetness with additional powdered sugar or honey if needed.
  9. Transfer mixture to serving dish. Shape into a dome and optionally decorate with whole almonds or a light dusting of powdered sugar.
  10. Allow sellou to rest several hours before serving to develop flavors.

Notes

  • Add 2 tablespoons orange blossom water for floral aroma.
  • Replace some almonds with walnuts for deeper nutty flavor.
  • Mix in 2 tablespoons ground flaxseed for added texture and nutrition.
  • Add pinch of nutmeg or ginger for extra warmth.
  • Reduce honey slightly for less sweet, more crumbly texture.
