Description

Mediterranean Spinach and Feta Crisps are savory, flaky pastries filled with sautéed spinach, garlic, and tangy feta cheese. Perfect as an appetizer, snack, or light meal, they’re easy to prepare and packed with bold, comforting flavors.


Ingredients

  • 1 sheet puff pastry (about 250 g / 9 oz), thawed
  • 1 tablespoon olive oil
  • 1 small onion (about 80 g / 3 oz), finely chopped
  • 2 garlic cloves, minced
  • 200 g (7 oz) fresh spinach, roughly chopped
  • 100 g (3.5 oz) feta cheese, crumbled
  • 1 large egg, beaten (for egg wash)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 teaspoon sesame seeds or nigella seeds (optional, for garnish)

Instructions

  1. Preheat oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook for 3–4 minutes until soft. Add garlic and cook for 30 seconds.
  3. Stir in spinach and cook until wilted and moisture evaporates, about 2–3 minutes.
  4. Season with salt, pepper, oregano, and nutmeg (if using). Remove from heat and let cool slightly.
  5. Mix crumbled feta into the cooled spinach mixture.
  6. Roll out puff pastry on a lightly floured surface and cut into squares or rectangles.
  7. Add a spoonful of filling to each piece. Fold or shape and place on the baking tray.
  8. Brush tops with egg wash and sprinkle with seeds if using.
  9. Bake for 18–22 minutes, until puffed and golden.
  10. Let cool slightly before serving.

  • Use fresh herbs like dill or parsley for added brightness.
  • Frozen spinach can be used if well-drained.
  • Substitute feta with ricotta or a blend of feta and mozzarella for a creamier filling.
  • Brush with olive oil or milk for an egg-free version.
