Description

A quick and flavorful Mediterranean flatbread topped with creamy cheese, seasoned spinach, artichokes, olives, and feta on a crisp baked base, perfect as an appetizer or light meal.


Ingredients

  • 1 piece flatbread (about 6x12 inches, thawed if frozen)
  • 85 g cream cheese, softened
  • 225 g frozen spinach, thawed and squeezed dry
  • 1 clove garlic, minced
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon dried dill
  • 1 pinch salt, to taste
  • 1/2 cup chopped fresh parsley
  • 5 marinated artichoke hearts, halved
  • 10 Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Place the flatbread on the prepared baking sheet and spread the softened cream cheese evenly over the surface.
  3. In a bowl, mix the thawed and well-drained spinach with the minced garlic, ground nutmeg, dried dill, and a pinch of salt until well combined.
  4. Spoon the spinach mixture over the cream cheese layer and spread it gently. Sprinkle the chopped parsley evenly on top.
  5. Arrange the halved artichoke hearts and Kalamata olives evenly over the flatbread.
  6. Sprinkle the crumbled feta cheese over the top.
  7. Bake for 8 to 10 minutes, or until the flatbread is heated through and the toppings are slightly golden.
  8. Remove from the oven and drizzle with olive oil.
  9. Slice into 8 triangles and serve warm.

Notes

  • Make sure the spinach is thoroughly squeezed dry to prevent the flatbread from becoming soggy.
  • You can use naan or pita if flatbread is not available.
  • For extra protein, add grilled chicken or cooked shrimp before baking.
  • Goat cheese or mozzarella can be used instead of feta for a different flavor.
  • Add sun-dried tomatoes, red onion, or bell peppers for more variety.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the oven or a skillet to keep the base crisp.
  • Avoid microwaving, as it can make the flatbread soft.
