Description
These matcha and white chocolate blondies combine earthy green tea flavor with creamy sweetness and a gooey center. Toasted hazelnuts add crunch, creating a rich and satisfying treat perfect for dessert or tea time.
Ingredients
- 140g butter, plus extra for greasing
- 200g white chocolate
- 220g golden caster sugar
- 2 large eggs
- 120g plain flour
- 1 tbsp matcha tea powder
- 50g blanched hazelnuts, toasted
Instructions
- Preheat oven to 180°C (160°C fan) or gas mark 4. Grease and line a 20cm square tin with baking parchment.
- Chop 100g of the white chocolate into chunks and set aside. Melt the remaining 100g with butter in a heatproof bowl over simmering water. Stir until smooth, then remove from heat and stir in sugar.
- Allow mixture to cool to room temperature. Beat in eggs one at a time.
- Fold in flour and matcha powder until just combined.
- Stir in hazelnuts and reserved chocolate chunks. Pour mixture into prepared tin and smooth the top.
- Bake for 25–30 minutes until edges are set and the center is slightly gooey.
- Cool completely in the tin, then slice into squares and serve.
Notes
- Swap hazelnuts with almonds, pistachios, or skip nuts for a nut-free version.
- Add dried cranberries or raspberries for fruity contrast.
- Drizzle melted dark chocolate on top for extra indulgence.
- Reheat blondies in microwave for 10–15 seconds for gooey texture.
