Ingredients
- 2 tablespoons extra-virgin olive oil, divided
- 4 boneless, skinless chicken breasts
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 3 cloves garlic, finely chopped
- 1 teaspoon fresh thyme leaves
- ½ teaspoon crushed red pepper flakes (optional)
- ¾ cup low-sodium chicken broth
- ½ cup sun-dried tomatoes, chopped
- ¾ cup heavy cream
- ½ cup Parmesan cheese, finely grated
- Fresh basil, torn, for garnish
Instructions
- Preheat oven to 375°F (190°C). Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat.
- Season chicken breasts generously with salt and pepper. Sear for 5 minutes per side until golden brown. Transfer to a plate.
- In the same skillet, heat the remaining tablespoon of olive oil. Add garlic, thyme, and red pepper flakes. Cook until fragrant, about 1 minute.
- Stir in chicken broth, sun-dried tomatoes, heavy cream, and Parmesan. Season with additional salt as needed.
- Bring to a simmer, then return chicken and any juices to the skillet.
- Transfer skillet to the oven and bake for 10–12 minutes, until chicken is cooked through (internal temperature 165°F / 74°C).
- Top with fresh torn basil and serve with sauce spooned over the chicken.
Notes
- Chicken thighs can be used instead of breasts for extra juiciness.
- Add pasta, mashed potatoes, or crusty bread to soak up the sauce.
- For a lighter version, use half-and-half instead of heavy cream.
- Make the sauce ahead of time and finish cooking just before serving.
- Do not freeze, as the cream sauce may separate when thawed.
