Description

Marry Me Chicken is a rich, creamy, and savory dish featuring seared chicken breasts simmered in a luscious sauce of garlic, sun-dried tomatoes, cream, Parmesan, and herbs. It’s perfect for both romantic dinners and weeknight meals.


Ingredients

  • 2 tablespoons extra-virgin olive oil, divided
  • 4 boneless, skinless chicken breasts
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 3 cloves garlic, finely chopped
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon crushed red pepper flakes (optional)
  • ¾ cup low-sodium chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • ¾ cup heavy cream
  • ½ cup Parmesan cheese, finely grated
  • Fresh basil, torn, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat.
  2. Season chicken breasts generously with salt and pepper. Sear for 5 minutes per side until golden brown. Transfer to a plate.
  3. In the same skillet, heat the remaining tablespoon of olive oil. Add garlic, thyme, and red pepper flakes. Cook until fragrant, about 1 minute.
  4. Stir in chicken broth, sun-dried tomatoes, heavy cream, and Parmesan. Season with additional salt as needed.
  5. Bring to a simmer, then return chicken and any juices to the skillet.
  6. Transfer skillet to the oven and bake for 10–12 minutes, until chicken is cooked through (internal temperature 165°F / 74°C).
  7. Top with fresh torn basil and serve with sauce spooned over the chicken.

Notes

  • Chicken thighs can be used instead of breasts for extra juiciness.
  • Add pasta, mashed potatoes, or crusty bread to soak up the sauce.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Make the sauce ahead of time and finish cooking just before serving.
  • Do not freeze, as the cream sauce may separate when thawed.
