Description

Juicy, herb-infused boneless turkey breast roasted with a sweet and tangy maple mustard glaze, perfect for holidays or healthy weeknight dinners.

Ingredients

  • 3 lb boneless skinless turkey breast
  • 2 tablespoons olive oil
  • 45 garlic cloves, minced
  • 1 tablespoon chopped fresh sage leaves (or 1 tsp dried)
  • 1 tablespoon chopped fresh thyme leaves (or 1 tsp dried)
  • 1 tablespoon chopped fresh rosemary leaves (or 1 tsp dried)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup pure maple syrup
  • 2 tablespoons mustard (yellow, Dijon, or brown)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons light-sodium soy sauce or coconut aminos
  • Optional garnishes: pomegranate seeds, garlic, cranberries, fresh herbs

Instructions

  1. Preheat oven to 350°F (175°C). Remove turkey from fridge 30–40 minutes before cooking.
  2. In a food processor, combine olive oil, garlic, sage, thyme, rosemary, salt, and pepper. Process until finely minced.
  3. Rub herb mixture all over turkey breast.
  4. Place turkey on a roasting pan and roast about 1 hour, rotating occasionally for even browning.
  5. Prepare glaze by mixing maple syrup, mustard, Worcestershire sauce, and soy sauce.
  6. At the 30-minute mark, brush half the glaze over turkey and continue roasting 15 minutes.
  7. Brush remaining glaze over turkey and roast another 15 minutes, until internal temperature reaches 165°F (74°C).
  8. Remove from oven, cover with foil, and rest 10 minutes.
  9. Slice turkey, arrange on serving platter, garnish as desired, and serve.

Notes

  • Use bone-in turkey breast for extra flavor; adjust cooking time accordingly.
  • Substitute dried herbs if fresh are unavailable (use one-third the amount).
  • Experiment with different mustards in the glaze.
  • Add a splash of orange juice or apple cider to the glaze for citrus flavor.
  • Roast with vegetables in the pan for a one-pan meal.
  • Store leftovers in airtight container in fridge 3–4 days; freeze up to 3 months.
  • Reheat gently at 325°F (163°C) or microwave slices with damp paper towel to retain moisture.
