Description
These refreshing mango popsicles combine sweet mangoes, creamy Greek yogurt, and honey for a healthy frozen treat perfect for summer.
Ingredients
- 2 cups fresh mango chunks (thawed if frozen)
- 1 cup plain Greek yogurt (or vanilla Greek yogurt)
- 1 teaspoon pure vanilla extract
- 1 tablespoon honey
Instructions
- Place the mango chunks, Greek yogurt, vanilla extract, and honey in a blender or food processor.
- Blend until the mixture is smooth and creamy.
- Pour the mixture into popsicle molds, leaving a small gap at the top.
- Insert the popsicle sticks and cover securely.
- Freeze for at least 4 hours, or overnight, until solid.
- To remove, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.
Notes
- Use vanilla Greek yogurt to skip adding honey and vanilla extract.
- For a vegan version, use plant-based yogurt and maple syrup.
- Add a splash of coconut milk or shredded coconut for a tropical twist.
- Frozen mangoes work great—just thaw before blending.
