Description

These Low Sugar Blueberry Basil Popsicles are a refreshing, plant-based frozen treat made with simple, wholesome ingredients. Naturally sweetened with blueberries and monk fruit, and infused with aromatic basil, they’re a perfect guilt-free snack or summer dessert.


Ingredients

  • 2 cups fresh or frozen blueberries
  • ¼ cup fresh basil leaves, loosely packed (about 15 leaves)
  • ¼ teaspoon monk fruit extract
  • ½ teaspoon amchur powder
  • 1 cup cold water

Instructions

  1. Wash and prepare the basil leaves by removing them from the stems.
  2. Add blueberries, basil, monk fruit extract, amchur powder, and cold water to a high-speed blender or food processor.
  3. Blend for about 1 minute, scraping down the sides as needed, until smooth and basil is fully incorporated.
  4. Carefully pour the mixture into popsicle molds and insert sticks if necessary.
  5. Freeze for at least 4 hours, or until completely solid.
  6. To serve, remove popsicles from molds by briefly running warm water on the outside of the molds.

Notes

  • Use mint instead of basil for a cooler, more refreshing twist.
  • Swap amchur powder with lemon juice for a citrusy note (if tolerated).
  • For sweeter pops, increase monk fruit extract slightly.
  • Add chopped blueberries after blending for added texture.
  • Store popsicles in airtight freezer containers for up to 3 months.
