Description
These Low Sugar Blueberry Basil Popsicles are a refreshing, plant-based frozen treat made with simple, wholesome ingredients. Naturally sweetened with blueberries and monk fruit, and infused with aromatic basil, they’re a perfect guilt-free snack or summer dessert.
Ingredients
- 2 cups fresh or frozen blueberries
- ¼ cup fresh basil leaves, loosely packed (about 15 leaves)
- ¼ teaspoon monk fruit extract
- ½ teaspoon amchur powder
- 1 cup cold water
Instructions
- Wash and prepare the basil leaves by removing them from the stems.
- Add blueberries, basil, monk fruit extract, amchur powder, and cold water to a high-speed blender or food processor.
- Blend for about 1 minute, scraping down the sides as needed, until smooth and basil is fully incorporated.
- Carefully pour the mixture into popsicle molds and insert sticks if necessary.
- Freeze for at least 4 hours, or until completely solid.
- To serve, remove popsicles from molds by briefly running warm water on the outside of the molds.
Notes
- Use mint instead of basil for a cooler, more refreshing twist.
- Swap amchur powder with lemon juice for a citrusy note (if tolerated).
- For sweeter pops, increase monk fruit extract slightly.
- Add chopped blueberries after blending for added texture.
- Store popsicles in airtight freezer containers for up to 3 months.
