Description

Loaded Potato Meatloaf is a hearty main dish combining juicy beef meatloaf with a creamy mashed potato topping and melted cheddar cheese. This comforting bake is perfect for cozy family dinners and makes delicious leftovers.


Ingredients

  • 454 g ground beef
  • 1 small onion, finely chopped (about 70 g)
  • 2 cloves garlic, minced
  • 120 ml milk
  • 1 large egg
  • 60 g plain breadcrumbs
  • 60 ml ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 700 g potatoes, peeled and cubed
  • 60 g butter
  • 120 ml milk or cream
  • 100 g shredded cheddar cheese
  • 1/2 teaspoon salt (for potatoes)
  • 1/4 teaspoon black pepper (for potatoes)
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat oven to 190°C (375°F). Lightly grease a loaf pan or baking dish.
  2. In a large bowl, combine ground beef, onion, garlic, milk, egg, breadcrumbs, ketchup, Worcestershire sauce, salt, pepper, parsley, and paprika. Mix gently until just combined.
  3. Shape the meat mixture into a loaf and press it into the prepared pan. Bake for 40 minutes.
  4. Meanwhile, boil the potatoes in salted water for 15–20 minutes until very tender. Drain well.
  5. Mash the potatoes with butter and milk until smooth. Stir in half of the cheese, salt, and pepper.
  6. Remove meatloaf from oven and spread mashed potatoes on top. Sprinkle with remaining cheese.
  7. Return to oven and bake for an additional 20 minutes until cheese is melted and golden.
  8. Let rest for 10 minutes before slicing. Garnish with chopped green onions and serve.
