Description

A fresh and creamy pasta dish with grilled chicken, tender asparagus, and linguine tossed in a bright lemon cream sauce, finished with parmesan cheese and optional lemon and parsley garnish.


Ingredients

  • 1 pound boneless, skinless chicken breasts, grilled and cut into strips
  • 1 pound asparagus, ends removed and cut into 1-inch pieces
  • 10 ounces linguine pasta (or spaghetti/fettuccine)
  • 3/4 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/3 cup finely shredded parmesan cheese
  • Optional garnishes: lemon slices and chopped parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions. Add asparagus during the last 3 minutes of cooking.
  2. Reserve 1/4 cup pasta cooking water and drain pasta and asparagus.
  3. In a small pot, combine heavy cream, butter, 1/2 teaspoon salt, and 1/4 teaspoon pepper over medium-high heat. Simmer 4 minutes until thickened. Remove from heat and stir in lemon zest and juice.
  4. Return pasta and asparagus to the pot. Add grilled chicken.
  5. Pour cream sauce over pasta mixture and toss to coat. Use reserved pasta water to thin if needed.
  6. Stir in parmesan cheese and adjust salt and pepper to taste.
  7. Garnish with parsley and lemon slices, then serve immediately.

Notes

  • Swap chicken for shrimp, salmon, scallops, or use canned white beans for a vegetarian option.
  • Any long pasta works; adjust cooking time for short pasta shapes.
  • Replace asparagus with green beans, broccoli, peas, or zucchini if desired.
  • Store leftovers in an airtight container in the fridge up to 3 days.
  • Reheat gently on low heat with a splash of cream or pasta water to loosen sauce.
