Description

A quick and flavorful take on Korean Bulgogi, this beef bowl features thinly sliced marinated beef stir-fried with vegetables and served over rice. The marinade includes grated apple and onion for a uniquely sweet and savory taste that’s authentically Korean yet incredibly easy to make.


Ingredients

14 oz / 400 g thinly sliced beef (rump, flank, sirloin, t-bone, or scotch fillet)

1 scallion/shallot stem, green and white parts separated and finely sliced

1/2 large onion, thinly sliced

1/2 medium carrot, sliced on the diagonal

1 tbsp cooking oil (peanut or vegetable)

1/2 tbsp sesame seeds

3 tbsp soy sauce

1 1/2 tbsp brown sugar

1 tbsp mirin (or dry sherry/sake + 1/2 tsp sugar or apple cider vinegar + 1/2 tsp sugar)

1/2 tbsp sesame oil

2 tbsp grated onion

2 cloves garlic, minced

3 tbsp grated red apple or nashi pear

1/2 tsp minced ginger

Black pepper, to taste


Instructions

  1. Blot beef dry and place in a bowl.
  2. Whisk together soy sauce, brown sugar, mirin, sesame oil, grated onion, garlic, grated apple, ginger, and black pepper. Pour over beef and mix to coat. Cover and marinate for at least 1 hour, preferably overnight.
  3. Heat oil in a wok or large frying pan over high heat. Add sliced onion and the white part of the scallion. Stir-fry for about 1 minute.
  4. Add marinated beef and sliced carrot. Stir constantly for 3–5 minutes until beef is just cooked through.
  5. Sprinkle with sesame seeds and garnish with green parts of the scallion.
  6. Serve immediately with rice or cauliflower rice.

Notes

  • Use thinly sliced beef for quick cooking and better marinade absorption.
  • Marinating overnight enhances the flavor significantly.
  • Substitute apple with pear or a mix of vinegar and sugar if needed.
  • Add chili paste or sliced chili for a spicy version.
  • Serve with kimchi, rice, and other Korean sides for a complete meal.
