Description

Ingredients

  • 2 cups heavy cream, room temperature (divided)
  • 1 cup sugar-free chocolate chips or chopped sugar-free chocolate bar (about 170 g)
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. In a small saucepan, heat 1 cup of heavy cream over low heat until it begins to gently simmer. Do not boil. Remove from heat.
  2. Place sugar-free chocolate in a heatproof bowl. Pour warm cream over the chocolate and add vanilla extract. Let sit for 1 minute, then whisk until smooth and glossy.
  3. Whisk in the remaining 1 cup of heavy cream. Cover and refrigerate for at least 2 hours until fully chilled.
  4. Using an electric hand mixer, whip the chilled mixture until stiff peaks form. Avoid overmixing.
  5. Spoon into 4 large bowls or 8 smaller dessert cups. Serve immediately or keep chilled until ready to serve.
