Description
A hearty and flavorful dish of Italian sausage cooked with sweet bell peppers and caramelized onions in a savory tomato sauce.
Ingredients
- 4 Italian sausages (halal beef or chicken)
- 2 tablespoons olive oil
- 1 large red bell pepper, sliced
- 1 large green bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 2 medium onions, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili flakes (optional)
- 1/2 cup crushed tomatoes
- 1 tablespoon tomato paste
- 1/4 cup water
Instructions
- Heat 1 tablespoon olive oil in a skillet over medium heat.
- Brown sausages on all sides for 6–8 minutes, then remove and set aside.
- Add remaining olive oil and cook onions until softened and slightly caramelized.
- Add bell peppers and cook for 5 minutes until slightly tender.
- Stir in garlic and cook for 1 minute until fragrant.
- Add oregano, basil, salt, pepper, and chili flakes.
- Stir in crushed tomatoes, tomato paste, and water.
- Return sausages to the skillet and cover.
- Simmer on low heat for 15–20 minutes until sausages are fully cooked.
- Serve hot on its own, over pasta, or in a sandwich.
Notes
- Use spicy or mild sausage based on preference.
- Add mushrooms or zucchini for extra vegetables.
- Skip tomatoes for a dry sautéed version.
- Store leftovers for up to 3 days in the fridge.
- Reheat with a splash of water if needed.
