Description

A hearty and flavorful dish of Italian sausage cooked with sweet bell peppers and caramelized onions in a savory tomato sauce.


Ingredients

  • 4 Italian sausages (halal beef or chicken)
  • 2 tablespoons olive oil
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 2 medium onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 cup crushed tomatoes
  • 1 tablespoon tomato paste
  • 1/4 cup water

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat.
  2. Brown sausages on all sides for 6–8 minutes, then remove and set aside.
  3. Add remaining olive oil and cook onions until softened and slightly caramelized.
  4. Add bell peppers and cook for 5 minutes until slightly tender.
  5. Stir in garlic and cook for 1 minute until fragrant.
  6. Add oregano, basil, salt, pepper, and chili flakes.
  7. Stir in crushed tomatoes, tomato paste, and water.
  8. Return sausages to the skillet and cover.
  9. Simmer on low heat for 15–20 minutes until sausages are fully cooked.
  10. Serve hot on its own, over pasta, or in a sandwich.

Notes

  • Use spicy or mild sausage based on preference.
  • Add mushrooms or zucchini for extra vegetables.
  • Skip tomatoes for a dry sautéed version.
  • Store leftovers for up to 3 days in the fridge.
  • Reheat with a splash of water if needed.
