Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line with parchment paper.
- Whisk together flour, baking powder, baking soda, and salt in a large bowl.
- In the same or separate bowl, whisk eggs and sugar until pale and slightly thickened.
- Add orange zest and whisk until fragrant.
- Slowly pour in olive oil while whisking to emulsify.
- Stir in milk, orange juice, and vanilla extract.
- Gradually add dry ingredients, mixing gently until just combined. Do not overmix.
- Pour batter into prepared pan and smooth the top.
- Bake for 40–50 minutes, until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar and garnish with fruit if desired.
