Description

A creamy Italian-inspired crockpot chicken and potatoes dish made with tender chicken breasts, buttery fingerling potatoes, roasted red peppers, spinach, pesto, and Parmesan in a rich, savory sauce. Perfect for an easy, comforting slow cooker dinner.


Ingredients

  • 4 small boneless, skinless chicken breasts (or 2 large, halved lengthwise)
  • 16 fingerling potatoes, halved lengthwise
  • 3/4 cup low sodium chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons cornstarch
  • 1 teaspoon basil pesto
  • 1 teaspoon salt
  • 2 cloves garlic, minced
  • 1/8 teaspoon black pepper
  • 1/2 cup jarred roasted red peppers, diced
  • 1 cup fresh spinach, roughly chopped
  • 2 tablespoons freshly grated Parmesan cheese

Instructions

  1. Halve the fingerling potatoes lengthwise for even cooking.
  2. Place chicken breasts in the bottom of a 3–4 quart crockpot. Arrange potatoes around and underneath the chicken.
  3. In a bowl, whisk together chicken broth, heavy cream, cornstarch, pesto, salt, garlic, and black pepper until smooth.
  4. Stir diced roasted red peppers into the sauce.
  5. Pour the sauce evenly over the chicken and potatoes.
  6. Cover and cook on HIGH for 2–3 hours or LOW for 4–5 hours, until potatoes are fork-tender and chicken reaches 165°F (74°C).
  7. Stir in chopped spinach and Parmesan cheese until spinach wilts.
  8. Taste and adjust seasoning if needed. Serve warm.

Notes

  • Chicken thighs can be used instead of breasts for extra juiciness.
  • Add carrots or parsnips with the potatoes for more vegetables.
  • For a lighter version, substitute evaporated milk for heavy cream.
  • Store refrigerated up to 3 days; add a splash of broth when reheating.
  • Freezing may slightly change the texture of the cream-based sauce.
