Description

Ingredients

  • 1 tablespoon olive oil
  • 4 garlic cloves, crushed
  • 400 g tinned chopped tomatoes
  • 2 x 400 g tins butter beans, drained and rinsed
  • a handful of fresh basil leaves, torn
  • salt, to taste
  • black pepper, to taste

Instructions

  1. Heat olive oil in a saucepan over medium heat.
  2. Add garlic and sauté for 1–2 minutes until fragrant.
  3. Stir in chopped tomatoes and simmer for 10 minutes.
  4. Add butter beans and mix well.
  5. Season with salt and black pepper.
  6. Simmer for another 10 minutes, stirring occasionally.
  7. Stir in fresh basil.
  8. Serve warm with crusty bread.
