Description

This moist and fluffy banana cake is packed with real banana flavor and topped with a simple vanilla glaze. Perfect for breakfast, brunch, or dessert, it’s an easy one-bowl recipe that feels comforting yet impressive.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 3 very ripe bananas, mashed (about 1½ cups)
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/4 cup milk
  • Vanilla Glaze:
  • 1/2 cup powdered sugar
  • 12 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper and grease lightly.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy (2–3 minutes).
  4. Add eggs one at a time, mixing after each. Stir in vanilla.
  5. Mix in mashed bananas, sour cream, and milk until combined.
  6. Fold in dry ingredients gently just until no streaks remain.
  7. Pour batter into prepared pan. Smooth the top and bake for 50–60 minutes or until a toothpick comes out clean.
  8. Cool completely in the pan before removing.
  9. For the glaze: whisk together powdered sugar, vanilla, and milk. Drizzle over cooled cake and let set.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • Do not overmix the batter once dry ingredients are added to keep the cake light.
  • Add-ins like nuts or chocolate chips can be folded in before baking.
