Description

These crispy cheesy corn fritters combine the sweetness of corn, richness of sharp cheddar, and freshness of green onions into golden bites perfect for snacks, sides, or appetizers. Quick to fry and naturally vegetarian.


Ingredients

  • 2 cups fresh corn kernels
  • 1 cup shredded sharp cheddar cheese
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • 0.25 cup finely chopped green onions
  • Neutral oil for frying

Instructions

  1. Cut fresh corn kernels from the cob if using whole corn. Measure out all ingredients.
  2. In a large bowl, whisk together the all-purpose flour and baking powder.
  3. In a separate bowl, beat the eggs. Stir in corn, shredded cheddar cheese, and chopped green onions.
  4. Combine wet ingredients with dry ingredients, folding gently just until combined. Do not overmix.
  5. Heat a thin layer of neutral oil in a skillet over medium heat.
  6. Drop spoonfuls of the batter into the hot oil, spacing them out in the pan.
  7. Fry each fritter for about 3 minutes per side, or until golden brown and crisp.
  8. Transfer cooked fritters onto a paper towel-lined plate to drain excess oil.
  9. Serve warm for best texture and flavor.

  • Use well-drained canned or thawed frozen corn if fresh isn’t available.
  • To maintain crispiness, fry in small batches and avoid overcrowding the pan.
  • For a spicy kick, add chili flakes or diced jalapeños to the batter.
