Ingredients
- 1 chocolate cookie crust (9-inch, store-bought or homemade)
- 8 oz (225 g) cream cheese, softened
- 1/2 cup (60 g) powdered sugar
- 1 teaspoon vanilla extract
- 1 cup (240 ml) cold heavy whipping cream
- 2 1/2 cups (about 400 g) fresh strawberries, hulled and halved
- 1 cup (170 g) semi-sweet chocolate chips
- 1/2 cup (120 ml) heavy cream (for chocolate topping)
Instructions
- In a large bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract; mix until well combined.
- In a separate bowl, whip cold heavy cream until stiff peaks form. Gently fold into the cream cheese mixture until smooth and fluffy.
- Spread cream filling evenly into the chocolate cookie crust.
- Arrange halved strawberries cut-side down over the filling, covering the surface completely.
- To make the chocolate topping, heat 1/2 cup heavy cream in a small saucepan until steaming. Remove from heat, add chocolate chips, and let sit for 1 minute. Stir until smooth and glossy.
- Pour the chocolate ganache evenly over the strawberries, letting it drip between the fruit. Spread gently if needed.
- Refrigerate for at least 4 hours, or until fully set.
- Slice and serve chilled. For clean slices, use a hot knife wiped dry between cuts.
