Description

Juicy and flavorful chicken kofta made with ground chicken, fresh herbs, and warm spices. This versatile Middle Eastern-inspired dish is perfect for grilling, baking, or pan-frying.


Ingredients

  • 1 lb (450 g) ground chicken
  • 1 small onion, finely grated
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice

Instructions

  1. In a bowl, combine ground chicken, grated onion, garlic, parsley, and cilantro. Mix gently.
  2. Add cumin, coriander, paprika, cinnamon, salt, and black pepper. Drizzle olive oil and lemon juice, then mix until combined.
  3. Cover and refrigerate for at least 30 minutes.
  4. Shape mixture into oval or sausage-like forms, with or without skewers.
  5. Cook in a skillet over medium heat for 4–5 minutes per side until browned and cooked through, or bake at 200°C (400°F) for 18–20 minutes, or grill for 10–12 minutes.
  6. Serve hot with rice, flatbread, or yogurt sauce.

Notes

  • Add breadcrumbs if mixture is too soft.
  • Use ground turkey as an alternative.
  • Add chili flakes for extra heat.
  • Store in the refrigerator for up to 3 days or freeze for up to 2 months.
  • Chill mixture before shaping for easier handling.
