Ingredients
- 8 ounces cream cheese, room temperature
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 3 cups corn kernels (fresh, frozen and thawed, or canned and drained)
- 2 cups grated cheese, divided (Mexican blend, cheddar, Monterey Jack, or similar)
- 4 ounces canned green chilies, diced
- 2 green onions, chopped
- 1/2 teaspoon cumin or chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon hot sauce (optional)
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease an 8 x 8-inch baking dish.
- In a large mixing bowl, combine the softened cream cheese, mayonnaise, and sour cream. Mix until smooth and creamy.
- Add the corn kernels, 1 1/2 cups of the grated cheese, diced green chilies, chopped green onions, cumin or chili powder, salt, black pepper, and hot sauce if using. Fold everything together until evenly combined.
- Transfer the mixture to the prepared baking dish and spread it out evenly.
- Sprinkle the remaining 1/2 cup grated cheese over the top.
- Bake for about 20 minutes, or until the dip is hot, bubbly around the edges, and the cheese is melted.
- Let cool slightly before serving warm with chips, bread, crackers, or fresh vegetables.
Notes
- This recipe is great for last-minute entertaining and comes together quickly.
- For more heat, add chopped jalapeños or extra hot sauce.
- You can use cheddar, Monterey Jack, mozzarella, or a Mexican cheese blend.
- For a lighter version, replace part of the cream cheese with Greek yogurt.
- Cooked shredded chicken, shrimp, or browned ground beef can be added for extra protein.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat in the oven at 350°F (175°C) for 15 to 20 minutes, stirring halfway through.
