Ingredients
- 200 g feta cheese (block in brine preferred)
- 100 g cream cheese (or thick Greek yogurt)
- 2 tablespoons honey, plus more for drizzling
- 1 tablespoon extra virgin olive oil, plus more for finishing
- 1 tablespoon fresh lemon juice
- Freshly ground black pepper, to taste
- Pinch of salt, if needed
- ¼ cup shelled pistachios, roughly chopped
- Optional garnish: fresh thyme, mint, or rosemary
Instructions
- Crumble feta and soften cream cheese at room temperature for 10–15 minutes.
- In a food processor, blend feta, cream cheese, honey, lemon juice, and olive oil until smooth, scraping sides as needed.
- Taste and adjust with more honey, olive oil, pepper, or salt if desired.
- Transfer whipped feta to a serving bowl or plate.
- Drizzle with extra honey and olive oil.
- Sprinkle with chopped pistachios and garnish with fresh herbs if using.
- Serve with toasted bread, pita chips, crackers, or vegetables.
