Ingredients

  • 4 medium parsnips, peeled and cut into 2-inch batons
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon cornflour (cornstarch)
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 200°C (400°F) fan forced. Line a baking tray with parchment paper.
  2. Peel and trim parsnips, then cut into 2-inch batons.
  3. Bring a pot of salted water to a boil. Simmer parsnips for 2 minutes, then drain well.
  4. In a large bowl, whisk together honey, olive oil, soy sauce, cornflour, garlic powder, salt, and pepper.
  5. Toss the parsnips in the marinade until evenly coated.
  6. Spread parsnips in a single layer on the prepared tray.
  7. Roast for 15 minutes, flip, then roast for another 5 minutes until golden and caramelized.
