Ingredients
- 4 medium parsnips, peeled and cut into 2-inch batons
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 teaspoon cornflour (cornstarch)
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 200°C (400°F) fan forced. Line a baking tray with parchment paper.
- Peel and trim parsnips, then cut into 2-inch batons.
- Bring a pot of salted water to a boil. Simmer parsnips for 2 minutes, then drain well.
- In a large bowl, whisk together honey, olive oil, soy sauce, cornflour, garlic powder, salt, and pepper.
- Toss the parsnips in the marinade until evenly coated.
- Spread parsnips in a single layer on the prepared tray.
- Roast for 15 minutes, flip, then roast for another 5 minutes until golden and caramelized.

- Swap honey for maple syrup for a richer flavor.
- Add chili flakes or sriracha to the marinade for heat.
- Sprinkle fresh rosemary or thyme before roasting for a herby twist.
