Description

Ingredients

  • 2 lbs sweet potatoes, peeled and cut into bite-sized cubes
  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp unsalted butter, melted
  • Juice and zest of 1 lemon
  • ¼ cup honey
  • Salt, to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with foil.
  2. Place sweet potato cubes in a large bowl and season with salt.
  3. In a small saucepan over medium heat, melt butter with olive oil. Add lemon juice, lemon zest, and honey; simmer for 1 minute.
