Description

Honey Pistachio Energy Squares are chewy, no-bake bars made with rolled oats, pistachios, almond butter, and honey. They’re a naturally sweet, protein-rich snack ideal for breakfast, workouts, or healthy treats.


Ingredients

  • 2 cups rolled oats
  • 1 cup raw pistachios, shelled and finely chopped
  • 1/2 cup natural almond butter
  • 1/3 cup honey
  • 1/4 cup ground flaxseed
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 2 to 3 tablespoons warm water (as needed)

Instructions

  1. In a large bowl, mix oats, pistachios, flaxseed, chia seeds, cinnamon, and salt until well combined.
  2. In a separate bowl, stir together almond butter, honey, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and mix well. Add warm water 1 tablespoon at a time if the mixture is too dry, until a sticky dough forms.
  4. Line an 8 x 8 inch pan with parchment paper. Press the mixture firmly and evenly into the pan.
  5. Refrigerate for at least 1 hour until firm. Remove and cut into 12 squares.

Notes

  • Use maple syrup or date syrup to make the recipe vegan.
  • Choose unsalted pistachios to control sodium levels.
  • Add dried fruit for extra sweetness or protein powder for added protein.
  • Use a clean, sharp knife for easier cutting.
