Description
Honey-mustard roasted cabbage wedges turn simple green cabbage into a deliciously caramelized side dish. Roasted to golden perfection and glazed with a tangy-sweet mustard sauce, this dish is easy, healthy, and full of flavor.
Ingredients
1 small head green cabbage (2–2½ pounds)
3 tablespoons Dijon mustard
2 tablespoons honey
½ teaspoon salt
⅛ teaspoon salt (for finishing)
½ teaspoon ground pepper
½ teaspoon garlic powder
¼ cup extra-virgin olive oil
Chopped fresh flat-leaf parsley for garnish (optional)
Instructions
- Preheat oven to 425°F and line a large rimmed baking sheet with foil.
- Remove any damaged outer leaves from the cabbage. Cut into 8 wedges, keeping the root intact to hold them together.
- In a small bowl, whisk together Dijon mustard, honey, ½ teaspoon salt, pepper, and garlic powder. Set aside 2 tablespoons of the mixture.
- Whisk olive oil into the remaining mustard mixture and brush it over both sides of the cabbage wedges.
- Arrange wedges along the edges of the baking sheet for better browning. Roast for 30 minutes.
- Flip the wedges and roast for another 15 minutes, or until browned and tender.
- Sprinkle with remaining ⅛ teaspoon salt, drizzle with reserved honey-mustard glaze, and garnish with parsley before serving.
Notes
- Use Savoy or red cabbage for a twist in texture and color.
- Substitute honey with maple syrup for a deeper sweetness.
- Add cayenne or red pepper flakes to the glaze for heat.
- Pairs well with roasted chicken, salmon, sausages, or veggie burgers.
- Reheat in a 350°F oven for 10 minutes to keep edges crisp.
