Description

This honey mustard chicken is juicy, flavorful, and incredibly easy to make. Marinated in a simple blend of honey, Dijon mustard, garlic, and olive oil, it’s perfect for baking or grilling. A quick and reliable recipe that works for weeknights, meal prep, or entertaining.

Ingredients

  • 1 ½ to 2 pounds boneless, skinless chicken breasts or thighs
  • 1/3 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 3 cloves garlic, finely minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: 1/8 teaspoon cayenne pepper

Instructions

  1. In a bowl, whisk together honey, Dijon mustard, olive oil, garlic, salt, pepper, and cayenne (if using).
  2. Place chicken in a bowl or zip-top bag and pour marinade over. Toss to coat. Cover and refrigerate for 30 minutes to 1 hour.
  3. To Grill: Preheat grill to 400°F. Remove chicken from marinade and let excess drip off. Grill for 6–8 minutes per side or until internal temp reaches 165°F. Let rest 5–10 minutes before serving.
  4. To Bake: Preheat oven to 400°F. Place chicken in a greased baking dish or on a lined baking sheet. Bake 20–30 minutes until internal temp reaches 165°F. Rest for 5 minutes before serving.

Notes

  • Double the marinade and reserve half before marinating to use as a sauce after cooking.
  • Thighs stay juicier than breasts and are great for grilling.
  • Add lemon juice or smoked paprika for a flavor twist.
  • Also great with tofu or vegetables for a vegetarian option.
  • Use gluten-free mustard to keep the recipe gluten-free.
