Ingredients
- 1 ½ to 2 pounds boneless, skinless chicken breasts or thighs
- 1/3 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 3 cloves garlic, finely minced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Optional: 1/8 teaspoon cayenne pepper
Instructions
- In a bowl, whisk together honey, Dijon mustard, olive oil, garlic, salt, pepper, and cayenne (if using).
- Place chicken in a bowl or zip-top bag and pour marinade over. Toss to coat. Cover and refrigerate for 30 minutes to 1 hour.
- To Grill: Preheat grill to 400°F. Remove chicken from marinade and let excess drip off. Grill for 6–8 minutes per side or until internal temp reaches 165°F. Let rest 5–10 minutes before serving.
- To Bake: Preheat oven to 400°F. Place chicken in a greased baking dish or on a lined baking sheet. Bake 20–30 minutes until internal temp reaches 165°F. Rest for 5 minutes before serving.
Notes
- Double the marinade and reserve half before marinating to use as a sauce after cooking.
- Thighs stay juicier than breasts and are great for grilling.
- Add lemon juice or smoked paprika for a flavor twist.
- Also great with tofu or vegetables for a vegetarian option.
- Use gluten-free mustard to keep the recipe gluten-free.
