Description

A quick and flavorful baked salmon topped with a sweet and tangy honey mustard glaze, fresh dill, and garlic, ready in just 20 minutes for an easy yet elegant dinner.


Ingredients

to 2 pounds salmon fillets

3 tablespoons honey mustard (or 1½ tablespoons honey + 1½ tablespoons Dijon mustard)

3 cloves garlic, minced (about 3 teaspoons)

3 tablespoons extra virgin olive oil (divided: 2 tablespoons + 1 tablespoon)

1 tablespoon lemon juice

1 tablespoon chopped fresh dill

Pinch of salt


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together honey mustard, garlic, 2 tablespoons olive oil, lemon juice, dill, and salt.
  3. Line a roasting pan with aluminum foil. Brush salmon fillets on both sides with remaining 1 tablespoon olive oil. Place skin-side down if applicable.
  4. Coat the top of each fillet with the honey mustard glaze.
  5. Bake for 8–10 minutes, until salmon is just barely cooked through and still slightly translucent in the center. Let rest briefly before serving.

Notes

  • Swap dill for parsley or tarragon for a different flavor.
  • Add a pinch of cayenne pepper for heat.
  • For a richer glaze, mix in 1 teaspoon mayonnaise or Greek yogurt.
  • This recipe works well with trout or cod.
  • Prepare glaze up to 2 days ahead and store in the fridge.
