Ingredients
2 tablespoons vegetable oil (divided)
1 cup thinly sliced carrots
2 cups broccoli florets
1 pound boneless skinless chicken breasts, cut into bite-sized pieces
3 garlic cloves, minced
1/2 cup low-sodium chicken broth or water
1/4 cup soy sauce
3 tablespoons honey
1 tablespoon cornstarch
1 tablespoon cold water
Salt and black pepper, to taste
Instructions
- Heat 1 teaspoon of vegetable oil in a large pan over medium heat.
- Add sliced carrots and broccoli. Cook for about 4 minutes until tender. Remove and set aside.
- Wipe the pan clean and increase heat to high. Season chicken with salt and pepper.
- Add remaining oil and cook chicken for 3–4 minutes per side until golden and cooked through.
- Add garlic and sauté for 30 seconds.
- Return vegetables to the pan and cook for another 2 minutes.
- In a bowl, whisk together chicken broth, soy sauce, and honey.
- In a separate bowl, mix cornstarch with cold water to create a slurry.
- Pour the sauce into the pan, cook for 30 seconds, then stir in the slurry.
- Bring to a boil and cook for 1 minute until the sauce thickens.
- Serve hot over rice or noodles.

- Swap chicken for shrimp, tofu, or steak as desired.
- Enhance flavor with ginger, sesame oil, or lime juice.
- Add your favorite vegetables like bell peppers or snap peas.
