Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar, divided
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Combine the strawberries with ½ cup sugar in a bowl. Mash lightly and let sit for 30 minutes to release juices.
- Blend the strawberry mixture until smooth or leave it slightly chunky, as desired.
- In a separate bowl, whisk the remaining ½ cup sugar, heavy cream, milk, vanilla extract, and lemon juice until the sugar dissolves.
- Stir in the blended strawberry mixture.
- Pour into an ice cream maker and churn according to the manufacturer’s instructions (typically 20–25 minutes).
- Transfer to an airtight container and freeze for at least 4 hours, or until firm.
Notes
- For extra texture, stir in diced strawberries after churning.
- Reduce sugar slightly for a less sweet version, but be aware it affects creaminess.
- Place parchment paper on top before sealing to prevent ice crystals.
