Description

Ingredients

2 ½ cups all-purpose flour

1 teaspoon salt

1 cup (2 sticks) cold unsalted butter, cut into small cubes

½ cup cold water

1 tablespoon white vinegar (optional, improves dough texture)


Instructions

  1. In a large mixing bowl, combine the flour and salt.
  2. Add cold butter cubes to the flour and work them in using a pastry cutter or fork until the mixture resembles coarse crumbs with pea-sized butter pieces.
  3. Gradually stir in cold water and vinegar until the dough just comes together.
  4. Lightly knead the dough, shape it into a rectangle, and wrap it in plastic wrap. Refrigerate for at least 30 minutes.
  5. Roll dough into a 12×6-inch rectangle on a lightly floured surface.
  6. Fold the top third down, then fold the bottom third up (like a letter).
  7. Wrap in plastic and refrigerate for 30 minutes. Repeat the rolling and folding process two more times, chilling between each fold.
  8. Let the dough rest for at least 30 minutes before using.
  9. Preheat your oven to 400°F (200°C).
  10. Roll dough to 1/8-inch thickness and cut into desired shapes. Optionally, brush with egg wash for a golden crust.
  11. Bake for 12-15 minutes or until golden brown and puffed.
  12. Allow to cool slightly before using in your desired recipe.
