Description

This creamy and refreshing mango coconut soft serve is made with just a few ingredients and no ice cream maker. Naturally sweet and tropical, it’s perfect for a light, summery dessert or healthy snack.


Ingredients

  • 1 fresh mango, peeled, sliced, and frozen (about 1 to cups frozen mango chunks)
  • 23 tablespoons sweetened coconut cream
  • 1 tablespoon heavy whipping cream (plus more by the teaspoon if needed)

Instructions

  1. Peel and slice a ripe mango. Lay the slices on a tray and freeze for at least 4 hours or up to one week.
  2. Remove mango from freezer and let sit at room temperature for 3–5 minutes.
  3. Add frozen mango chunks and sweetened coconut cream to a blender. Blend until smooth and creamy.
  4. If the mixture is too thick, add 1 tablespoon of heavy whipping cream and blend again. Add more cream by the teaspoon if needed.
  5. Blend for about 3 minutes, scraping down the sides as necessary.
  6. Scoop into bowls and serve immediately. Optional: top with shredded coconut or fresh mango.
  7. For storage, transfer to an airtight container and freeze for up to 1 week. Let soften for 5 minutes before serving.

Notes

  • Use very ripe mango for the best sweetness and texture.
  • Pre-frozen mango can be used but may have slightly less flavor.
  • Add honey or maple syrup if extra sweetness is desired.
  • To make it vegan, use coconut milk or a plant-based cream instead of heavy cream.
  • Reblend briefly after freezing if the texture becomes too firm.
