Ingredients
½ cup warm water
3 tablespoons granulated sugar
1 tablespoon active yeast
2 ⅔ cups all-purpose flour
⅓ cup honey
¼ cup shortening (melted)
3 large egg yolks
1 teaspoon vanilla extract
½ teaspoon salt
Vegetable oil (for frying)

Instructions
- In the bowl of a stand mixer, combine warm water, 2 teaspoons of sugar, and yeast. Whisk until just combined and let sit for 5 minutes to activate the yeast.
- Swap to a dough hook, then add the remaining sugar, flour, honey, melted shortening, egg yolks, vanilla, and salt. Knead on medium speed for about 8 minutes until the dough is sticky yet smooth.
- Transfer the dough to a lightly greased bowl. Cover and let rise for 1 hour or until doubled in size.
- In a small bowl, whisk together cinnamon and granulated sugar.
- Once the dough has risen, roll it out into a 12” by 8” rectangle. Sprinkle cinnamon sugar over the surface and press it in gently. Roll the dough tightly, slice it into 8 pieces, and arrange them on a parchment-lined baking sheet. Let rise for 45 minutes.
- Heat vegetable oil in a large pan to 365°F (185°C).
- Fry the honey buns in batches for 90 seconds per side or until golden brown. Transfer them to a cooling rack.
- Whisk together powdered sugar, honey, melted butter, vanilla, and salt. Add warm water gradually to achieve the desired glaze consistency.
- Dip each fried honey bun into the glaze while still warm, ensuring a generous coating. Let them rest on the cooling rack to set.
- Serve warm for the best flavor and texture.

- For a lighter version, you can bake the honey buns at 350°F (175°C) for 15-20 minutes.
