Ingredients
- 2 pounds zucchini (about 3 to 4 medium), sliced into 1/2-inch pieces
- 1 tablespoon olive oil, plus more for drizzling

- 1/2 teaspoon dried Italian seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon red chili flakes (optional)
- 2 tablespoons grated Parmesan cheese, plus more for serving

Instructions
- Preheat oven to 400°F (204°C) and lightly oil a sheet pan.
- Slice zucchini into 1/2-inch thick angled pieces.
- In a large bowl, toss zucchini with olive oil, salt, Italian seasoning, garlic powder, black pepper, and chili flakes.
- Preheat the sheet pan in the oven for 2 to 3 minutes.
- Arrange zucchini in a single layer on the hot pan.
- Roast for 5 to 7 minutes until just tender.
- Sprinkle Parmesan over zucchini and switch oven to broil.
- Broil for 2 to 4 minutes until cheese is melted and lightly golden.
- Remove from oven, garnish with parsley and extra Parmesan, and serve warm.
