Description

These Healthy Folded Pesto Chicken Tortilla Wraps are a quick and satisfying meal packed with juicy chicken, melty cheese, fresh spinach, and flavorful basil pesto. Crispy on the outside and gooey inside, they’re ready in just 10 minutes — perfect for lunch, dinner, or meal prep.


Ingredients

  • 1 flour tortilla
  • ½ cup shredded or sliced cooked chicken (grilled, roasted, or air-fried)
  • 1 heaped tablespoon basil pesto (homemade or store-bought)
  • ½ cup shredded cheddar cheese (or mozzarella)
  • 2 thin slices tomato
  • 1 handful baby spinach
  • Olive oil spray or brush, for grilling

Instructions

  1. Place the tortilla on a cutting board and make a slit from the center to the edge.
  2. In one quarter of the tortilla, spread pesto and top with chicken.
  3. In the next quarter, place sliced tomatoes and season with salt and pepper.
  4. In the third quarter, add shredded cheese.
  5. In the final quarter, add baby spinach.
  6. Fold the wrap starting with the chicken section over the tomatoes, then over the cheese, and finally over the spinach, forming a triangle.
  7. Brush or spray both sides lightly with olive oil.
  8. Heat a skillet over medium heat and toast the wrap for 2–3 minutes per side until golden and crisp.
  9. Serve warm.

  • Use gluten-free or whole wheat tortillas to suit dietary needs.
  • Make it vegetarian by using roasted chickpeas or mushrooms instead of chicken.
  • Dry tomato slices with a paper towel to prevent sogginess.
  • Air fry at 180°C (350°F) for 5–7 minutes for extra crispness.
  • Homemade pesto offers the freshest flavor, but store-bought works great too.
