Ingredients
- 1 flour tortilla
- ½ cup shredded or sliced cooked chicken (grilled, roasted, or air-fried)
- 1 heaped tablespoon basil pesto (homemade or store-bought)
- ½ cup shredded cheddar cheese (or mozzarella)
- 2 thin slices tomato
- 1 handful baby spinach
- Olive oil spray or brush, for grilling
Instructions
- Place the tortilla on a cutting board and make a slit from the center to the edge.
- In one quarter of the tortilla, spread pesto and top with chicken.
- In the next quarter, place sliced tomatoes and season with salt and pepper.
- In the third quarter, add shredded cheese.
- In the final quarter, add baby spinach.
- Fold the wrap starting with the chicken section over the tomatoes, then over the cheese, and finally over the spinach, forming a triangle.
- Brush or spray both sides lightly with olive oil.
- Heat a skillet over medium heat and toast the wrap for 2–3 minutes per side until golden and crisp.
- Serve warm.

- Make it vegetarian by using roasted chickpeas or mushrooms instead of chicken.
