Description

A hearty and comforting soup made with ground beef, vegetables, and a tomato-based broth. Hamburger Soup is easy to prepare, flavorful, and perfect for family meals or meal prep.


Ingredients

  • 900 g ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 medium potatoes, peeled and diced
  • 2 tablespoons tomato paste
  • 1 can (400 g) diced tomatoes
  • 1.5 liters beef broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart. Drain excess fat if needed.
  2. Add chopped onion and cook for 3 minutes. Stir in garlic and cook for 30 seconds.
  3. Add carrots, celery, and potatoes. Stir to combine.
  4. Mix in tomato paste and cook for 1–2 minutes to coat the ingredients.
  5. Pour in diced tomatoes and beef broth. Add salt, pepper, paprika, oregano, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes until vegetables are tender.
  7. Remove bay leaf, adjust seasoning, and garnish with parsley if using. Serve hot.

Notes

  • Add peas, corn, or green beans for extra vegetables.
  • Stir in small pasta or rice near the end for a heartier version.
  • For a lighter version, reduce potatoes and add zucchini.
  • Simmer uncovered or mash potatoes to thicken if needed.
