Description
A hearty and comforting soup made with ground beef, vegetables, and a tomato-based broth. Hamburger Soup is easy to prepare, flavorful, and perfect for family meals or meal prep.
Ingredients
- 900 g ground beef
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 3 medium carrots, peeled and diced
- 2 celery stalks, diced
- 2 medium potatoes, peeled and diced
- 2 tablespoons tomato paste
- 1 can (400 g) diced tomatoes
- 1.5 liters beef broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 bay leaf
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart. Drain excess fat if needed.
- Add chopped onion and cook for 3 minutes. Stir in garlic and cook for 30 seconds.
- Add carrots, celery, and potatoes. Stir to combine.
- Mix in tomato paste and cook for 1–2 minutes to coat the ingredients.
- Pour in diced tomatoes and beef broth. Add salt, pepper, paprika, oregano, thyme, and bay leaf.
- Bring to a boil, then reduce heat to low. Cover and simmer for 25–30 minutes until vegetables are tender.
- Remove bay leaf, adjust seasoning, and garnish with parsley if using. Serve hot.
Notes
- Add peas, corn, or green beans for extra vegetables.
- Stir in small pasta or rice near the end for a heartier version.
- For a lighter version, reduce potatoes and add zucchini.
- Simmer uncovered or mash potatoes to thicken if needed.
