- 1 teaspoon Italian seasoning
- 3 cups fresh arugula
- Lemon Vinaigrette:
- 1/2 cup extra virgin olive oil
- 1/4 cup red wine vinegar
- Juice of 1 lemon
- 1 teaspoon coarse salt
- 1 teaspoon freshly ground black pepper
- Optional Sides:
- 6–8 rounds pita bread, cut into triangles
- 1 cup tzatziki
- 1 cup hummus
Instructions
- Preheat grill to medium-high (about 400°F / 200°C).
- Mix 3 tablespoons olive oil, garlic powder, and Italian seasoning in a small bowl.
- Brush mixture evenly over peppers, onion, zucchini, and halloumi.
- Grill chicken kebabs and vegetables 10–12 minutes, turning occasionally, until charred and chicken reaches 165°F (74°C).
- Remove cooked items and keep warm.
- Grill halloumi 2–3 minutes per side until golden with grill marks.
- Whisk together vinaigrette ingredients in a bowl.
- Toss arugula lightly with 2–3 tablespoons vinaigrette.
- Spread arugula on a large platter. Arrange grilled chicken, vegetables, and halloumi over top.
- Serve immediately with pita, tzatziki, and hummus.
