Ingredients
1 pound chicken breasts (boneless and skinless, cut into 1-inch pieces)
1 red onion (cut into 1-inch pieces)
1 red bell pepper (cut into 1-inch pieces)
1 yellow bell pepper (cut into 1-inch pieces)
1 medium zucchini (cut into 1-inch slices)
Marinade:
¼ cup olive oil
2 cloves garlic (minced)
2 tablespoons fresh parsley (chopped)
2 tablespoons fresh dill (chopped)
3 tablespoons lemon juice
1 tablespoon honey
½ teaspoon salt
¼ teaspoon black pepper (ground)
Instructions
- Soak wooden skewers in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat.
- In a large bowl, whisk together olive oil, minced garlic, parsley, dill, lemon juice, honey, salt, and black pepper to make the marinade.
- Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Thread the marinated chicken, red onion, bell peppers, and zucchini onto the skewers, alternating ingredients.
- Grill the skewers on medium-high heat for 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the grill, garnish with additional parsley if desired, and serve immediately.
Notes
- For a spicier kick, add red pepper flakes or cayenne pepper to the marinade.
- If you don’t have wooden skewers, you can use metal skewers or grill the kebabs directly on the grill.
- You can cook the kebabs in the oven at 450°F (232°C) for 20-25 minutes, turning halfway through.
- Feel free to swap out vegetables like mushrooms or cherry tomatoes for more variety.
- For a different flavor profile, try adding pineapple chunks to the skewers for a sweet twist.
