Description

Grilled Chicken Kebabs are a flavorful and easy-to-make dish featuring marinated chicken, colorful vegetables, and a zesty blend of herbs and spices. Perfect for any occasion, these kebabs can be grilled, baked, or cooked on a stovetop grill pan.


Ingredients

1 pound chicken breasts (boneless and skinless, cut into 1-inch pieces)

1 red onion (cut into 1-inch pieces)

1 red bell pepper (cut into 1-inch pieces)

1 yellow bell pepper (cut into 1-inch pieces)

1 medium zucchini (cut into 1-inch slices)

Marinade:

¼ cup olive oil

2 cloves garlic (minced)

2 tablespoons fresh parsley (chopped)

2 tablespoons fresh dill (chopped)

3 tablespoons lemon juice

1 tablespoon honey

½ teaspoon salt

¼ teaspoon black pepper (ground)


Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat.
  2. In a large bowl, whisk together olive oil, minced garlic, parsley, dill, lemon juice, honey, salt, and black pepper to make the marinade.
  3. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  4. Thread the marinated chicken, red onion, bell peppers, and zucchini onto the skewers, alternating ingredients.
  5. Grill the skewers on medium-high heat for 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from the grill, garnish with additional parsley if desired, and serve immediately.

Notes

  • For a spicier kick, add red pepper flakes or cayenne pepper to the marinade.
  • If you don’t have wooden skewers, you can use metal skewers or grill the kebabs directly on the grill.
  • You can cook the kebabs in the oven at 450°F (232°C) for 20-25 minutes, turning halfway through.
  • Feel free to swap out vegetables like mushrooms or cherry tomatoes for more variety.
  • For a different flavor profile, try adding pineapple chunks to the skewers for a sweet twist.
