Description

Greek Yogurt Lemon Bars are the perfect combination of creamy, tangy, and sweet, offering a refreshing treat with a zesty lemon flavor and a smooth, creamy texture from Greek yogurt. These bars are easy to make and perfect for any occasion.

Ingredients

1 1/2 cups all-purpose flour

1/2 teaspoon salt

3 room-temperature eggs

1/2 cup brown sugar

1/2 cup cane sugar

1/2 cup unsweetened yogurt (preferably full-fat)

2 teaspoons vanilla extract

1/4 cup lemon juice

Powdered sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine the flour and salt, mixing thoroughly.
  2. In a separate bowl, whisk together the eggs. Add brown sugar and cane sugar, mixing until well combined. Stir in yogurt and vanilla extract until fully incorporated.
  3. Add the lemon juice to the mixture, stirring well to combine.
  4. Gradually add the wet mixture to the dry ingredients, stirring continuously until smooth and lump-free.
  5. Line an 8.5 by 11-inch baking dish with parchment paper. Pour the batter into the dish, spreading evenly. Bake for 20-25 minutes. Check for doneness with a fork or toothpick; it should come out clean when inserted into the center.
  6. Once baked, allow the bars to cool completely. Sprinkle powdered sugar over the top and cut into slices. Serve and enjoy!
