Ingredients
- 8 bone-in, skin-on chicken thighs
- 1/4 cup extra-virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 4 garlic cloves, minced
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon Dijon mustard
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, Dijon mustard, salt, and pepper to make the marinade.
- Place chicken thighs in a large bowl or zip-top bag. Pour marinade over the chicken and coat evenly. Cover and refrigerate for 1 to 2 hours.
- Preheat oven to 350°F (180°C).
- Arrange the marinated chicken thighs skin-side up in a baking dish. Pour any remaining marinade over the chicken.
- Bake for 40–45 minutes, or until internal temperature reaches 175°F (80°C). Baste with pan juices once or twice if desired.
- Optional: Broil for 2–3 minutes at the end for extra crispy skin. Watch carefully to avoid burning.
- Let the chicken rest for 5 minutes before serving. Serve warm with your favorite sides.
