Description

This Greek Feta Salad Tower is a stunning, no-cook Mediterranean dish made by layering ripe tomatoes, creamy feta, olives, and herbs. It’s vibrant, refreshing, and perfect as a starter or light meal.


Ingredients

  • 3 large ripe tomatoes, thickly sliced
  • 200 g Greek feta cheese, cut into cubes
  • ½ small red onion, thinly sliced
  • ¼ cup Kalamata olives
  • ¼ cup green olives
  • ¼ cup extra virgin olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon chili flakes (optional)
  • Salt, to taste
  • Cracked black pepper, to taste

Instructions

  1. In a small bowl, whisk together olive oil, parsley, oregano, chili flakes (if using), salt, and black pepper.
  2. Add feta cubes to the dressing and gently toss to coat. Let marinate for a few minutes.
  3. Begin assembling the tower by placing a few feta cubes in the center of a plate as the base layer.
  4. Layer tomato slices on top, followed by red onion slices and a mix of olives.
  5. Repeat layers 2–3 more times, using the remaining ingredients.
  6. Spoon remaining herb dressing over the tower, letting it drizzle down the sides.
  7. Let rest for 10 minutes to allow flavors to meld. Serve chilled or at room temperature with optional crusty bread.
