Description
This Greek Feta Salad Tower is a stunning, no-cook Mediterranean dish made by layering ripe tomatoes, creamy feta, olives, and herbs. It’s vibrant, refreshing, and perfect as a starter or light meal.
Ingredients
- 3 large ripe tomatoes, thickly sliced
- 200 g Greek feta cheese, cut into cubes
- ½ small red onion, thinly sliced
- ¼ cup Kalamata olives
- ¼ cup green olives
- ¼ cup extra virgin olive oil
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano
- ½ teaspoon chili flakes (optional)
- Salt, to taste
- Cracked black pepper, to taste
Instructions
- In a small bowl, whisk together olive oil, parsley, oregano, chili flakes (if using), salt, and black pepper.
- Add feta cubes to the dressing and gently toss to coat. Let marinate for a few minutes.
- Begin assembling the tower by placing a few feta cubes in the center of a plate as the base layer.
- Layer tomato slices on top, followed by red onion slices and a mix of olives.
- Repeat layers 2–3 more times, using the remaining ingredients.
- Spoon remaining herb dressing over the tower, letting it drizzle down the sides.
- Let rest for 10 minutes to allow flavors to meld. Serve chilled or at room temperature with optional crusty bread.
Notes
- Use firm tomatoes like beefsteak to maintain structure.
- Serve immediately for the best texture and visual appeal.
- Add cucumbers, roasted peppers, or mixed greens for variation.
- Omit chili flakes for a milder version.
