Ingredients
- 2 boneless, skinless chicken breasts, sliced
- 2 tbsp olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 cups cooked rice or quinoa
- 1 cup diced cucumber
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, sliced
- 2 tbsp fresh parsley, finely chopped
- 1/2 cup crumbled feta cheese
- 1/3 cup plain Greek yogurt
- 1 tbsp olive oil (for whipped feta)
- 1 tbsp lemon juice (for whipped feta)
- 1 tsp lemon zest
- 1 small garlic clove, minced (for whipped feta)
Instructions
- In a bowl, mix olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for at least 15 minutes.
- Heat a skillet over medium-high heat. Cook marinated chicken for 6–8 minutes until golden and fully cooked.
- Prepare whipped feta by blending feta, Greek yogurt, olive oil, lemon juice, lemon zest, and garlic until smooth and creamy. Set aside.
- Divide cooked rice or quinoa between bowls. Top with chicken, cucumber, cherry tomatoes, red onion, and olives.
- Spoon lemon whipped feta on top. Garnish with chopped parsley and serve immediately.
