Description

A vibrant and nourishing Greek-inspired bowl featuring lemon-oregano marinated chicken, fresh vegetables, grains, and a creamy lemon whipped feta topping. Perfect for meal prep or a flavorful lunch or dinner.


Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, sliced
  • 2 tbsp fresh parsley, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/3 cup plain Greek yogurt
  • 1 tbsp olive oil (for whipped feta)
  • 1 tbsp lemon juice (for whipped feta)
  • 1 tsp lemon zest
  • 1 small garlic clove, minced (for whipped feta)

Instructions

  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for at least 15 minutes.
  2. Heat a skillet over medium-high heat. Cook marinated chicken for 6–8 minutes until golden and fully cooked.
  3. Prepare whipped feta by blending feta, Greek yogurt, olive oil, lemon juice, lemon zest, and garlic until smooth and creamy. Set aside.
  4. Divide cooked rice or quinoa between bowls. Top with chicken, cucumber, cherry tomatoes, red onion, and olives.
  5. Spoon lemon whipped feta on top. Garnish with chopped parsley and serve immediately.
