This granola parfait with raspberry chia jam is a layered, wholesome treat featuring creamy Greek-style yogurt, tart homemade raspberry chia jam, crunchy granola, and fresh raspberries. It’s easy to make, satisfying, and great for breakfast or a snack.
Ingredients
- Raspberry Chia Jam:
- 1 cup frozen raspberries
- 1 tablespoon maple syrup
- 1 tablespoon chia seeds
- Parfait Layers:
- 2/3 cup Greek-style yogurt
- 1/3 cup granola (e.g., raspberry coconut flavor)
- 1/4 cup fresh raspberries (for garnish)
Instructions
- In a small saucepan over medium-low heat, combine frozen raspberries and maple syrup. Cook while mashing the berries with the back of a spoon until they break down into a thick pulp (about 5 minutes).
- Remove from heat and stir in chia seeds. Transfer to a heatproof container and refrigerate for at least 20 minutes to thicken (or overnight).
- To assemble the parfait, layer half of the yogurt in a jar or glass, then half of the jam, then half of the granola.
- Repeat the layers with remaining yogurt, jam, and granola.
- Top with fresh raspberries and serve immediately.
Notes
- Use plant-based yogurt and maple syrup for a vegan version.
- Jam can be stored in the fridge up to 5 days in an airtight container.
- To maintain granola crunch, store it separately and layer just before eating.
- Try other berries (blueberries, strawberries) in place of raspberries.
