Description

This granola parfait with raspberry chia jam is a layered, wholesome treat featuring creamy Greek-style yogurt, tart homemade raspberry chia jam, crunchy granola, and fresh raspberries. It’s easy to make, satisfying, and great for breakfast or a snack.


Ingredients

  • Raspberry Chia Jam:
  • 1 cup frozen raspberries
  • 1 tablespoon maple syrup
  • 1 tablespoon chia seeds
  • Parfait Layers:
  • 2/3 cup Greek-style yogurt
  • 1/3 cup granola (e.g., raspberry coconut flavor)
  • 1/4 cup fresh raspberries (for garnish)

Instructions

  1. In a small saucepan over medium-low heat, combine frozen raspberries and maple syrup. Cook while mashing the berries with the back of a spoon until they break down into a thick pulp (about 5 minutes).
  2. Remove from heat and stir in chia seeds. Transfer to a heatproof container and refrigerate for at least 20 minutes to thicken (or overnight).
  3. To assemble the parfait, layer half of the yogurt in a jar or glass, then half of the jam, then half of the granola.
  4. Repeat the layers with remaining yogurt, jam, and granola.
  5. Top with fresh raspberries and serve immediately.

Notes

  • Use plant-based yogurt and maple syrup for a vegan version.
  • Jam can be stored in the fridge up to 5 days in an airtight container.
  • To maintain granola crunch, store it separately and layer just before eating.
  • Try other berries (blueberries, strawberries) in place of raspberries.
